JIF lemon juice and sugar, all you need for Pancake Day, right?

“We have spent the whole of February testing various combinations for the black pudding pancake, and our final recipe is not only tasty, but also tosses brilliantly

Wrong. Those crazy folk in Bury are trying to encourage people to swap the conventional in favour of a more unusual pancake filling, black pudding.

Chefs at Barista at the Rock in Bury have created a special calzone style folded pancake with the town’s famous produce taking pride of place, and they’re calling it ‘Pancakes A La Bury.’ The floury cakes never sounded so classy.

Pancakes A La Bury don’t only contain the sanguine stuff, they also include a mixture of chorizo, finely chopped red onion, wholegrain mustard and double cream sauce.

Arnold Wilcox–Wood, Centre Director of The Rock, said: “This February The Rock are celebrating the ‘Month Of Love’, and what better way to celebrate Pancake Tuesday than by enjoying the best of Bury produce?

“This is a first for Bury, but after tasting the black pudding pancake, I am sure it will become a regular on every Pancake Tuesday table.”

Victoria Kay, Managing Director of Barista comments: “We have spent the whole of February testing various combinations for the black pudding pancake, and our final recipe is not only tasty, but also tosses brilliantly.”

The Bury black pudding pancake will be available on Pancake Tuesday, 21 February, at Barista at The Rock.

Revolutionary or random, you decide.
