A GREAT breakfast menu is always good news. A great breakfast menu followed by great lunch and dinner has got to be an interesting concept, so we’re excited to see what Bill’s has to offer. Already established as a popular foodie destination in the south, the restaurant will shortly be opening on John Dalton Street, complete with its trademark decor and service.

Starting out as a cafe in 2001, by Bill Collison, who mixed greengrocery with extraordinary seasonal dishes, the place soon had people queueing out the door, having earned a reputation for its celebratory attitude to food. “Our food is still a very important part of who we are, but my big thing is to create somewhere that is welcoming to everyone,” says Bill, who is still very much involved in the business. “From quiet booths for couples, or meetings and big sharing tables for get-togethers, it’s all about making sure everyone feels welcome. And I like to make sure we add plenty of sparkle.”

We know there’s lots of competition and we’re going to have to work hard to make an impression, so we’re throwing lots of time and energy into getting it right. Our all day offering makes us different, but what I would say makes us unique is the effort we put into everything. The food of course, but also staff training and the decor. Get the atmosphere right and people will come.”
