MANCHESTER235 has appointed a new head chef for its Linen restaurant – Jaromir Hlavsa, or Jarda as he's more commonly known in these parts.
The Czech chef's impressive credentials bagged him the top job.
Originally from Prague, he trained at a private culinary college in the city for three years before working his way up the ranks at the Radisson Alcron Hotel (which recently became the first hotel in the Czech Republic to receive a Michelin star).
In December 2004, Jarda moved to Manchester and started as chef de partie at Malmaison. In 2010, he was made head chef and put in charge of the French-style Malmaison Brasserie. In 2011, Jarda also helped to transform the brasserie into the Smoak Bar and Grill.
Jarda said, “My initial focus for Linen is to take the menu back to a contemporary British style. I would also like Linen to gain at least one rosette, with my overall ambition to have our restaurant included in the Michelin Star Guide. I am really looking forward to giving the a la carte menu a real wow factor.”
We've had a gander at the new menu – and very enticing it looks too. Local produce with inspiration plucked from further afield, it does 'contemporary British' to the tee.
We particularly like the sound of the Buttered green Cheshire asparagus with Maltaise sauce, and the Cumbrian Lamb T-Bones with baby spinach and sautéed chanterelle mushrooms.
