WHEN Authentic Spanish restaurant, Iberica, ran a tapas recipe competition to raise money for the charity Action Against Hunger, people entered from far and wide.

Manchester’s own Thomas Cook was just pipped at the post and came a very respectable second place with his standout tapas dish of Ibérico pork tenderloin with Asturian cider, prunes and apples.

With a fantastic prize on offer like flying to Spain to visit Iberica Executive Head Chef Nacho Manzano’s two Michelin star restaurant AND getting your dish on the Iberica menu, it’s no wonder competition was fierce.

The winning dish was a miniature horse mackerel escabeche by Daniel Lopez from La Coruña in Spain and his entry will be on the Iberica menu until 15 April with a pound from each dish sold going to support the work of Action Against Hunger.

But it was a close run thing as the finalists prepared their perfect tapas dish for a panel of judges including Olive editor Christine Hayes and top-level Spanish chefs, Jose Pizarro and Esther Manzano at Ibérica Canary Wharf.

It was a great night all round with £4000 raised for Action Against Hunger and some inventive new tapas dishes created.

This passion for Spanish gastronomy is coming soon to Manchester. Iberica is opening in Spinningfields in March so it won’t be long before you can enjoy such authentic delights as gazpacho of red berries, beetroot and anchovy or chuletón – Bilbao-style 30-day hung rib of organic beef.
