GARY Usher, chef-owner of the award-winning Sticky Walnut in Chester and Burnt Truffle in Heswall, has announced that Hispi, his third neighbourhood bistro, will open on Friday 7th October.

Chef Usher is currently interviewing potential staff members for his 60-cover restaurant which is set to open in what was previously Jem & I in School Lane, Didsbury. He was originally hoping to open a site in Chorlton, but various possible locations fell through.
Hispi has been made possible by crowdfunding on Kickstarter.com, which raised almost £60,000 from 718 backers. An additional £100,000 of funding came from Usher’s bank.
They have been posting progress shots of the building work on their Twitter page which includes a mezzanine level and brand new wooden floor.
Usher will be hoping Hispi can emulate the success of Sticky Walnut, which opened in Hoole in 2011 and has been lauded by restaurant critics, chefs, and bloggers ever since. In 2014 the bistro was named the AA's Uk 'Restaurant of the Year', while Olive Magazine recently placed Usher amongst the nation's Top 13 'Most Important Chefs' (why thirteen? Bit weird).
A one-off collaboration between Sticky Walnut and Birmingham's Michelin starred Simpson’s restaurant recently sold out in just over two hours. Both restaurants featured in this year’s National Restaurant Awards Top 100 list.
Hispi opens on School Lane on Friday 7 October.
