AWARD-WINNING restaurant and bar, Cicchetti, has created a new seasonal dish just in time for summer – tartare of calamari with piattone.

Part of the phenomenally successful San Carlo Group, Cicchetti on King Street West strives to create original, regional dishes using only the finest Italian seasonal ingredients.

The management team and head chefs make regular trips to Italy, sourcing the best produce and researching local recipe ideas and methods.

Following the latest gastronomic research trip to Italy, Filippo Pagani, development chef at San Carlo Group, has created an original seasonal special for Cicchetti – Tartare of Calamari with Piattone.

Piattone is a seasonal vegetable local to Lazio, which is flown in from produce markets for Cicchetti. The long, white legume looks a little like a white mange tout but tastes similar to a delicate white asparagus.

The delightfully simple dish is bursting with fresh seasonal ingredients, and Pagani has combined the fresh calamari tartare with; salt, pepper, pancetta, red chilli, garlic and oregano, before heating gently for two minutes.

The calamari is served with a side of piattone dressed in olive oil and parsley.

The dish tastes even better when perfectly served with a chilled glass of chilled Frascati – which is named after its place of origin - in Lazio.

The special will be available for a limited time only for £6.95.

Winner at the Manchester Food and Drink Awards and named Best Restaurant 2011 by Manchester Confidential, San Carlo Cicchetti continues to flourish.
