Manchester's culinary wizards are back with a seven-course tasting menu
We didn’t manage to do many restaurant reviews in 2020 but one of the few places we visited that absolutely blew us away was Tine - a tine-y restaurant from Josh Shanahan and James Lord that was popping up temporarily at Blossom Street Social wine bar in Ancoats.
It’s The Bungalow - a former security cabin on stilts - where Tine will be pronging your tastebuds
Down-to-earth Mancunians Josh and James had previously provided top-class fork fodder at an impressive collection of Manchester restaurants including Manchester House, The French and some little old place called Mana. They had also been involved in a wild but very short-lived ride at Wilderness before it became Wolf At The Door, turfed out the talented pair and started doing hamburger baos. But snazzy CVs aside, the lads were determined to make a name for themselves on their own merits.
What is Tine and who are the chefs?
When we visited to review Tine in October, we were dazzled by the attention to detail in dishes like cured day-boat fish with green strawberry and lacto-hazelnut milk, hogget saddle with grilled pumpkin seed and walnut and umeboshi with salted plum. In fact, we reckon we were probably more gutted than they were when their short tenure came to an end.
In an interview we did with Josh Shanahan and James Lord during a brief respite from lockdown they talked about massive ambitions for a permanent home for their ideal campfire-style cooking experience. They talked so passionately about their fervour for food and fire that we were ready to put down cold, hard cash for a ticket to go on that exhilarating journey with them.
But without the funding of some big kahuna that gets many restaurants off the ground, these supremely talented local lads had the wheels of their dreams spinning in the mud for a while.
So we’re very pleased to announce that the lads are one step closer to opening up that bricks n mortar (and FIRE) gaff of their own, albeit with another temporary pop up at Kampus Manchester. If it gets them back in the kitchen koji-ing and scorching bits of flesh for our delectation then we are very much here for it.
In case it’s yet to hit your radar, Kampus is a “garden neighbourhood” at the top of Canal Street developed by Capital and Centric of Manctopia fame. It is home to many city dwellers and has just announced its latest addition, The Stack, an “iconic brutalist 60s tower block” of 123 apartments.
What's cooking at Tine's pop up at Kampus?
It’s The Bungalow at Kampus - a former security cabin on stilts - where Tine will be pronging your tastebuds. The space has already been home to other Confidentials-approved feeders such as Higher Ground, Isca and Breadflower. The Tine supper will be available to book Thurs-Sun evenings until the end of September. This time, wines will some from natural wine specialists Le Social who will be picking suitable bottles to match the food.
But what of the food? On the £60 seven-course menu will be dishes such as oyster with wild plum, day-boat ikejime sea bass with smoked yolk, and green strawberry with walnut parfait and frozen Eccles cake. See the full opening Tine @ Kampus menu on Instagram.
