Fideuà Negra is a pasta version of a seafood paella – perfecto!
FRESH ingredients and preparation take centre stage at independent Spanish restaurant Tapeo & Wine, with seasonal produce throwing some delicious specials into the mix.
The latest dish of the month is Fideuà Negra, a squid ink pasta with cuttlefish, prawns and Spanish wet garlic.
The Fideuà Negra is perfect for sharing, and is served in a traditional large, flat paella pan for you to just dig in
Similar to paella, Fideuà is a seafood speciality originally from the coast of Valencia, which uses pasta noodles instead of rice.
Don’t be alarmed – as its name suggests, Tapeo & Wine’s version is black, thanks to the squid ink! But it comes topped with bright pink cooked langoustines plus freshly cut lemon wedges for a cheery contrast to the dark base.
The Fideuà Negra is perfect for sharing, and is served in a traditional large, flat paella pan for you to just dig in. And if only one of you fancies giving it a whirl, you can order a smaller portion.
As with traditional paella, the Fideuà takes a little extra time to reach your table perfectly cooked, so allow 30 minutes when placing your order. Relax – it’s well worth the wait!
