Ambitious new Manchester venue will open in former Roc & Rye site this summer

Award winning Scottish chef Nico Simeone has chosen Manchester as the place to introduce his first English venture, 'Six by Nico', which he will open in July. 

The 250 square foot restaurant will occupy the former Roc & Rye site in Spring Gardens, and will replicate the concept of his ‘Six by Nico’ restaurants in Glasgow, Edinburgh and Belfast, as well as '111 by Nico' in Glasgow, which aims to create 'a new restaurant every six weeks.'

The new 66-cover restaurant, with a wine and spirits bar, will offer the very best seasonal produce within a series of carefully curated and constantly evolving menu concepts. Nico and his team are keen to ‘re-invent’ the dining experience – serving a brand new six-course tasting-menu every six weeks – each one themed upon a different place, memory or idea. 

Inspiration for dishes comes from both home and abroad, ranging from the street markets of the Middle East to a journey across America’s Route 66. The aim for Nico and his team is to combine different ingredients, flavours, and dishes, to inspire memories and stories from diners.

Food will be used as a narrative, with each menu aiming to tell a different story, taking guests on a new and exciting journey each time they visit. Each new ‘chapter’ will be kept a surprise with new menus only being published two-weeks before the introduction of the next theme. Past menu themes have included picnics, childhood nostalgia, Catalonian cuisine

Chef Nico was born in Glasgow to Italian parents. His earliest memories are of his mother’s Italian cooking, helping her in the kitchen and enjoying large family meals around the table. His colourful career has included stints at Michelin starred Number One at Balmoral, where he worked with Craig Candle and was awarded Young Scottish Seafood Chef of the Year award at the age of twenty. He then went on to work as part of the talented team at Brian Maule’s acclaimed, Chardon d’Or.

In summer 2015, Nico opened '111 by Nico' in Glasgow's West End and in 2017, 'Six by Nico' opened in Finnieston, Glasgow. The concept was born from a passion for experimenting with new ingredients and developing and creating unique dishes. ‘Six by Nico’ in Edinburgh opened in 2018, followed by Six by Nico Belfast in March 2019.

“We have been overwhelmed by the success and the appeal of our first 'Six by Nico' sites in Glasgow, Edinburgh and Belfast, and we couldn't be more delighted about bringing a completely new offering and dining experience to the people of Manchester".

Six by Nico Manchester promises to be eye-catching as well as delicious. It will boast a minimal design, starkly contrasted by grand fixtures and fittings with atmospheric mood lighting. The restaurant will feature a modern design open kitchen. "Combining our focus on food and design, we love to create lifestyle dining environments that are dynamic yet relaxed - spaces customers love to dine in," continued Nico.

Severino has been appointed by the team to develop the new city centre restaurant and work is currently underway at the former Roc & Rye site at 60 Spring Gardens. Six by Nico plans to create thirty new hospitality jobs.

Nico’s business goals and work ethic aimed towards challenging his skills as both a chef and restaurant operator, are what have led him and his eager team to embark on expanding the 'Six by Nico' restaurant concepts. The restaurant plans to expand the brand further across the UK in the near future.
