Japanese fine dining restaurant recognised at prestigious hospitality awards

MUSU was recognised with the prestigious three AA rosettes on Monday (23 September) at the AA Hospitality Awards 2024.

Following the exciting news of its upcoming expansion into The MUSU Collection, the Japanese fine dining restaurant joined the list of high end restaurants to have been awarded three rosettes at event at Grosvenor House in London.

In their writeup the AA inspector said: “The simple black frontage doesn’t give much away but step inside MUSU and it’s easy to see why this discreet restaurant draws a cool crowd including Manchester’s star footballers. Booth seating and a minimalist design sets the scene for the contemporary Japanese-inspired cooking. 

“Top drawer sushi and sashimi is only part of the story and the tasting menus deliver highly-skilled dishes. Miso-glazed cod cheek, shiitake dashi, lardo and spring herbs might be followed by aged beef fillet, asparagus, whipped miso hollandaise and bordelaise sauce. As well as top-flight wines, there are cocktails and lots of saki.”

The restaurant recently hailed ‘a new era’ as it announced its upcoming expansion into The MUSU Collection, with the first in the series, KAJI, launching in October and set to offer flame-inspired dishes that blend classic Japanese techniques with bold, modern ideas. 

On the planned menu for KAJI the restaurant said: “The KAJI menu is inspired by culinary traditions of Japan, and incorporates influences from Southeast Asia, Brazil, Peru, and Portugal, where Japanese communities have made their mark. These global influences bring exciting flavours, spices, and techniques back to Japan, creating dishes that are a fusion of open-flame grilling and rich cultural diversity.

“A few highlights from the menu include A5 Japanese Wagyu Tartare with sumo miso and Cacklebean hen’s egg yolk, and Wild Sea Bass, served with langoustine and white miso broth. 

“The menu also features playful takes on classic dishes, including steak and chips — Meat of the Day grilled over coals, served with ox cheek-stuffed shiitake mushrooms, togarashi, sansho pepper sauce, and crispy potatoes. Similarly, the Fish of the Day takes inspiration from the much-loved fish and chips, combining flame-grilled fish with seaweed butter sauce and crispy potatoes.”
