The head chef who's giving the food of the islands the attention it deserves

THERE'S no shortage of Caribbean food in South Manchester but there is a shortage of Caribbean restaurants. So we're happy to see this new arrival on Wilbraham Road in central Chorlton. Island Vibe is a Caribbean restaurant and cocktail bar that serves classic inspired dishes with a contemporary twist in a bright and welcoming setting. 

 The 'vibe' is definitely more restaurant than cafe thanks to a head chef whose CV includes The Lowry Hotel, Lounge Ten and Room. Ricardo Wallace brings real flair to the Caribbean food he grew up with, presenting dishes with style and panache.

 Dishes such as the ever-familiar jerk chicken are served with sides of orange and lime zest sweet potato mash, mango salsa, and a mild lime, coconut sauce. And the classic rice and peas is served with lamb chop cooked three ways and fried plantain.

 Starters include dishes such as salt fish fritters served with cucumber and pineapple salsa and a light nutmeg dressing, and Trini pholourie with tamarind yoghurt and mango dip.

 The service is warm and friendly – they want the atmosphere to bring the Caribbean sunshine as much as the food does. And at the bar you'll find a very tempting range of Caribbean cocktails, and a good selection of premium rums.
