Filippo Pagani, executive development chef for San Carlo Group restaurants has introduced a limited edition special dish for Cicchetti, first cooked for him by his mamma Gloria back home in Cortina D’Ampezzo, in the southern Alps of northern Italy.

Smooth and rich, yet deceptively simple in its ingredients, Ravioli Casunziei is a hand crafted ravioli, stuffed with a beetroot filling and finished with a smooth butter sauce.

A dish native to Cortina, where beetroot grows happily at 1224 metres, Filippo says ravioli casunziei enjoys a long history in his village:

“Every mamma in Cortina knows how to make this dish; it’s a much loved meal that you won’t find anywhere else. Our mammas were so clever at taking simple ingredients which grew naturally and making the best of them, just as we like to do at Cicchetti. The beetroot mixture tastes light and smooth yet has a richness to it, which works well with the simple ravioli and the butter sauce. When I eat it, I close my eyes and I’m home.”

Filippo’s Ravioli Casunziei Cicchetti costs £6.50 and will be available at Cicchetti Manchester from Friday 26 February until Mother’s Day on Sunday 6 March.
