THERE'S a new publishing house in the city: Manchester Books Limited.

Their first book has been launched and is called Crispy Squirrel and Vimto Trifle.

Foodies in Manchester may recognise Crispy Squirrel and Vimto Trifle as the handiwork of the indefatigable chef of the Mark Addy, Robert Owen Brown.

This book is a mix of the remarkable recipes of a remarkable chef and also a gleeful trot through the life and times of a 21st century kitchen-botherer.

Some of the anecdotes are utterly hilarious involving beermats and veal as well as yarns about hollowed out filing cabinets becoming kitchen hardware. Some are more serious, but all underline how Robert Owen Brown's north western roots inspire his memorable dishes.

The book is also beautiful, a tribute to the design flair of Joby Catto. The words come via Neil Sowerby, a Confidential freelancer, and one of the foremost munchers and drinkers in the North.

Admired by food critics such as Jay Rayner and fellow chefs of the calibre of Fergus Henderson, with time served at The Midland, Brasserie St Pierre, Reform and Lounge Ten amongst others, Robert Owen Brown is not only a chef who knows all the correct preparations of tripe and how to present the perfect grouse, but a man who can cook with great finesse.

Indeed he's been a Confidential favourite for years, the genuine article, a chef without compromise, difficult occasionally, interesting always, impatient to brew up some new notion of how Northern English cooking can be re-interpreted.
