This is vegetarian dining but not as you know it. The dishes aren't missing meat, they each have their own star ingredients that sing on the plate. Everything is presented beautifully; a riot of colour, fresh and exciting, banishes the grey skies outside in an instant.

You can see this in the care that goes into preparing dishes such as wild mushroom and potato crackling with smoked mayonnaise and burnt rye crumb or beer-battered halloumi with mushy pea emulsion, lemon curd and sea herbs.
