SAKANA have really set the bar high when it comes to Asian cuisine in Manchester. There may be plenty of other pan-Asian restaurants around, but Sakana sets itself apart with its chic interior, its extensive and inventive range of drinks and, above all, its food.

The food is an exciting mix of the authentic and traditional blended with modern gastronomy. Delicious. There is no other word for it. The new a la carte menu in the downstairs restaurant is no exception.

Sashimi

Even the snacks on the menu tell a story. Whilst the traditional edamame beans have a place there, oyster, Thai aromatics and mango shot suggests that although the restaurant is relaxed, the head chef and his team are serious about food. Beautifully presented, it’s a dish that wouldn’t be out of place in any Michelin-star kitchen. This is exactly what Sakana is about – classic dishes are served to perfection but the food is also inventive, original and full or flair.

Sakana sushi

The sushi on the menu is very high quality – fresher than fresh and all made by hand. The pickled mackerel nigiri is a true classic, with the rich oily mackerel taking on a new dimension whilst the salmon and blackberry gunkan showcases interesting flavour combinations that work together harmoniously.

Tempura dishes are light, crisp puffs of delight, the almond prawn tempura bringing a meaty sweetness to the delicate savoury batter. It’s a marriage made in heaven. The hirata steamed buns are another experience you must try if you haven’t already. The pillowy soft parcels filled with pork belly, apple and misoyaki sauce are a favourite.

The robata grill, a traditional Japanese cooking method, enhances the natural flavours of the food. Tuna tataki, cooked over charcoal, is a revelation that is a million miles from John West.

The food at Sakana is a real treat, perfect if you want to indulge yourself. And you can’t get much more indulgent than swordfish with champagne, yuzu, miso and pomegranate. If it’s foodie luxury you’re after, don’t miss out on dessert. This is where the playful fusion of flavours and ideas really comes into its own. Who could resist matcha tiramisu with wasabi macaroon or molasses tart with miso and apple ice cream?
