BILL'S is an interesting concept, as it’s open all day, from early in the morning for breakfast, throughout the day and into the evening for supper. Big on service, big on atmosphere, the menu is a mix of breakfast, lunch and dinner classics, from eggs benedict and granola with fresh fruit right through to barbecue ribs, burgers and risotto.

“We like to make sure there’s something for everyone,” says Bill Collison, founder of Bill’s, who started back in 2001 with a small cafe/greengrocery in the south. “With the food, but also with the experience. So, we have small booths for couples and quiet meetings, large tables and areas for get-togethers, leather sofas for reading the paper over a coffee, and a bar area. Beyond that though, we also like to really look after our customers - make sure they have a good time and come back again!”

“My Dad was a market gardener, so I’ve always worked with growing stuff, then I had the greengrocery, so seasonality is important to us. Our menus change with the seasons and we cook as much as we can using fresh ingredients. And we’re always on the lookout for new suppliers and better ways of presenting our food.

“We’re very excited about opening in Manchester - it’s a serious city, with lots to live up to. I’ve been spending quite a bit of time here and I love the buzz and the atmosphere. The restaurant has all the best of Bill’s trademarks - a shabby chic mix of soft leather sofas, a bar, and two outside terraces. For the summer months, folding doors open out on to the street, so the place feels very light and airy.

“I think what makes us a bit different is the effort we put into everything, from the menus and staff training, to me picking bits and pieces up from auctions and antique fairs to give the place a really welcoming feel. The restaurant has a real bustle during the day and then, come the evening, we turn down the lights, get the candelabras glowing and it’s a really different vibe. I really hope we get it right and that Manchester loves us as much as we are going to love being here. Fingers crossed!”
