The refined dining destination will launch this summer

Gordon Ramsay Restaurants Global has announced a new partnership with Fairmont Cheshire to open a new dining destination called Gordon Ramsay at The Mere Resort.

Set to become the signature restaurant of the hotel, the new opening will welcome both hotel residents and diners from the surrounding area and beyond. Gordon Ramsay at The Mere will deliver the brand’s hallmark precision, confidence and flavour-led cuisine.

The new addition comes at a great time for The Mere, which is currently undergoing an extensive multi-million-pound refurbishment and expansion. With newly designed guest rooms, enhanced public spaces and wellness facilities, and a refined culinary focus, the resort aims to reach new levels of luxury, positioning itself as the hotel of choice for both business and leisure travellers visiting the North West.

As part of its repositioning, Fairmont Cheshire, The Mere forms part of Fairmont Hotels and Resorts portfolio and represents the brand’s fifth site in the UK. The opening also marks a continued relationship between Gordon Ramsay Restaurants Global and Fairmont, building on the group’s longstanding presence at The Savoy in London, home to Savoy Grill, The River Restaurant and Michelin-starred Restaurant 1890.

This launch reflects Gordon Ramsay Restaurants Global’s considered approach to growth, prioritising distinctive locations and long-term partnerships. Following the opening of Lucky Cat Manchester in 2023, Cheshire presents a natural and strategically aligned addition to the group’s expanding UK portfolio.
