THE spring classes for the Ning cookery school are filling up fast. Hosted by celeb chef Norman Musa, they're hands-on, friendly, and aimed at novice and experienced chefs alike.

Fans of Malaysian food flock from afar for the classes, which are held at Ning in the Northern Quarter on Saturdays. This season's schedule features four masterclasses led by Norman in Manchester, plus one at the Ning restaurant in York, led by the friendly head and sous Chefs Aboon and Amin. We've bagged a ticket for the final class to giveaway to one lucky reader. The Nyonya Cuisine Masterclass on Saturday 11 May is probably the only cookery class in this style of food in the UK.

Nyonya cuisine is unique to Malaysia and Singapore and reflects the distinctive heritage of Chinese immigrants who inter-married with local Malays. Originating in the historical city of Melaka in south west Malaysia, this fusion of Chinese, Malay and Portuguese influences dates back to the sixteenth century when the Portuguese colonized this part of the region.

Once a dying culinary art, Nyonya is now enjoying a resurgence in Malaysia. In this class, you'll learn how to create delicious Nyonya dishes from scratch, while exploring its historical influences and specific cooking techniques.
