Cibus is a real gem, a neighbourhood restaurant that’s worth travelling to, set on the bustling Stockport Road, in an area that’s really having a moment right now.
It started out as a pizza restaurant but it has become so much more than that.
Yes, the pizzas are just about perfect – slow-proved and made with tip-top toppings. Everything is made with the best local produce and specialist imported Italian ingredients for that authentic taste you just can’t find in a cash and carry.
But Cibus also sells Italian nibbles – their savoury salted doughnuts with pesto mayo and marinara sauce are a speciality that everyone should try – as well as skilfully made pasta dishes like maccheroni alla Genovese with its rich beef featherblade ragù, fresh seasonal fish dishes and classics like bavette steak with truffle potatoes and baby gem salad with anchovy dressing.
Every last detail of every last dish is just about spot on.
It’s not just the food either. A lot of thought has gone into this place – the wholly Italian wine list is impeccable; the cocktails are pure class and even the craft beers and softs are sourced from quality Italian producers. This about more than a feeling of authenticity, it’s the real deal.
