The neighbourhood restaurant will be taken over and transformed by Open Restaurant Group
Didsbury restaurant Hispi, owned by Gary Usher as part of his company Elite Bistros, has been sold and taken over by Open Restaurant Group to become ‘Arcadian’, a new concept focused on live-fire cooking, opening later this month.
Open Restaurant Group, operated by Sam Morgan and chef Andy Sheridan, will retain all staff and evolve the restaurant into this new live-fire venture inspired by the basque cooking styles of north-west Spain. Diners can expect plenty of meat-based dishes, whole fish and vegetables cooked over charcoal and wood, providing plenty of smoke, flame and theatre.
Having seen a rise in popularity over the past few years, open flame cooking has become a trendy dining option in the city and now, its suburbs.
Business completion is expected on 10 August, with the aim of reopening two weeks later with a change of direction, but with a very strong kitchen and front-of-house team already in place.
Speaking on the takeover, Sam says: “We’d like to pay tribute to Gary and his team. Elite Bistros has been an incredible company that’s fed the people of the North West over the past decade. We’re looking forward to working with the Hispi team and we’ll be making sure there are no job losses as we pick up the baton,
“We’re delighted to become custodians of a well-respected restaurant and we have an exciting vision for its future and to create something new for the Didsbury community.”
