WHAT with the recent announcements regarding The Refinery, Grafene and Gasworks Brew Bar, Manchester’s latest raft of new food and booze openings possess a distinct whiff of science and industry – which, coincidentally, is exactly what the folks behind Northern Quarter’s Cane & Grain have called their newly branded first floor bar.
Yes Science & Industry is a new experimental drinks project from the twice nominated Manchester Food & Drink Festival Award's 'Bar of the Year', and whilst the brassy wooden belly of the bar remains mostly untouched (aside from the addition of Manchester’s ubiquitous bee), it’s what’s going on in the lab at the back – headed-up by award-winning bartender and resident wacky professor Massimo Zitti – that’s of most interest.
Here Massi, working with the University of Manchester's chemistry department, has been beavering away creating an idiosyncratic menu of crystallizations, one-off distillations and 'edible perfumes'.
Sound mad? He is abit...
