TUSK is a restaurant and bar that's recently opened on High Street in the Northern Quarter.

Each is meticulously made with fresh fruit purees and home-made syrups and infusions such as lemongrass vodka, fig whisky, and chilli rum

It's an African-Mancunian hybrid that brings an element of exoticism and escapism to this corner of the city.

Marks Bars %281 Of 1%29.JpgThe eclectic interior features hand block printed fabrics from a mill in Hyde that exported fabrics to Africa in the nineteenth century, plus authentic masks and animal horns, and up-cycled furniture made by Manchester artisans. It's like visiting the home of a Victorian explorer who's just returned from a journey to the equator.

The drinks are equally transporting. They've put their all into producing a cocktail menu that will compete with the surrounding bars.

As well as fruity concoctions and sharers, it features Tusk's own twist on classics in a collection of cocktails called The Big Five. Each of these is meticulously made with fresh fruit purées and home-made syrups, bitters and infusions such as lemongrass vodka, fig whisky, and chilli rum. They're decorated with colourful, tropical fruit – you'll want to photograph your drink before you sip it.

The food at Tusk is gourmet burgers served with skin on fries. Choose from beef, lamb, wild boar, jerk chicken and spiced bean. They've kept the menu short but gone big on detail to ensure each one stands out.

For example the beef burger features three cuts of beef: flat rib, chuck and brisket. It's served with lettuce, crispy onion rings, dill pickle and a vine tomato, red pepper and chilli relish.
