This changes according to which fishes, meats and vegetables look best that week, with three options for each course. A sample week might include a starter of stilton and spinach tart, a main of corn fed chicken with madeira jus, French beans and fondant potato, and a dessert of vanilla pannacotta with raspberry sorbet.
The ever-changing nature of the menu gives the chefs freedom to impress in their own way (not always the case when a restaurant is part of a hotel chain). And new dishes mean there's no danger of complacency – the kitchen is place of passion and verve rather than recipes cooked by rote.
