LIVERPOOL now is host to the UK’s first bar to focus on baijiu, a Chinese alcoholic beverage whose history can be traced over 5000 years. Pronounced ‘bye-joe’, the name literally translates to ‘white liquor’ and represents a category of Chinese spirits distilled from fermented sorghum or other grains. Known for its distinctive aroma and powerful kick - with an average alcohol content of 40-60% - baijiu represents nearly a third of worldwide spirits, with production more than doubling that of its closest vodka competitor.

Move over vodka - there’s a new drink in town.

Despite this, the drink remains relatively unknown in the West - something FU plans to change. The innovative new venue will introduce guests to the exotic tipple, which will be served both straight and as a series of unique cocktails.

Straight is of course the traditional Chinese method: there was no such thing as fancy cocktails in 3000 BC after all. FU recommends raising your glass for a toast and ‘clinking’ in the lowest position to demonstrate humility - before shouting ‘ganbei’ (dry the glass) and showing your empty vessel as proof. Want to get trollied? Simply repeat.

Handmade and ‘ghetto dim sum’ is also available to enjoy in between toasting rounds; including fennel, radish and shallot spring rolls, slow roasted pork belly in sticky black bean sauce and tempura seaweed crisps.

While similar in appearance to any other white spirit, baijiu is unlike anything else so you really owe it to yourself to take advantage of this unique experience and join us for a glass. When was the last time you had the opportunity to try a drink you’d never previously sampled before?”
