NEW restaurant Bill’s is soon to open its doors in Liverpool ONE. It's an interesting concept as it’s open all day, from early in the morning for breakfast right through to the evening for supper. The menu is a mix of breakfast, lunch and dinner classics, from eggs benedict to granola with fresh fruit, to barbecue ribs, burgers and risotto. And it has a reputation for being big on service and big on atmosphere.

“We like to make sure there’s something for everyone,” says founder Bill Collison, who started back in 2001 with a small cafe-greengrocery in the South. “With the food, but also with the experience. So we have small booths for couples and quiet meetings, large tables and areas for get-togethers, leather sofas for reading the paper over a coffee, and a bar area. Beyond that though, we also like to really look after our customers – make sure they have a good time and come back again.
“My dad was a market gardener so I’ve always worked with growing stuff, then I had the greengrocery, so seasonality is important to us. Our menus change with the seasons and we cook as much as we can using fresh ingredients. And we’re always on the lookout for new suppliers and better ways of presenting our food.
“We’re very excited about opening in Liverpool – it’s an exciting city. With some of our other restaurants we tend to be a big fish in a small pond, but that’s definitely not the case with Liverpool, quite the opposite.
“We all know we are going to have to work hard to stand out from the crowd and we are putting a lot into the restaurant, both in terms of great staff, but also with the decor and the atmosphere. We know Liverpool ONE has plenty of choice when it comes to eating, so we need to make an impact.
“I think what makes us a bit different is the effort we put into everything, from the menus and staff training, to me picking bits and pieces up from auctions and antique fairs to give the place a really welcoming feel.
“The restaurant has a real bustle during the day and then, come the evening, we turn down the lights, get the candelabras glowing and it’s a really different vibe. I really hope we get it right and that Liverpool loves us as much as we are going to love being here.”
Bill’s Liverpool opens on 18 August.
