“One of the best places to eat pizza in the world” claims international guidebook
Hailed as “one of the best places to eat pizza in the world” by international guidebook, Where to Eat Pizza, Rudy's Pizza, first opened in Manchester's own 'Little Italy' in Ancoats in 2015, has revealed plans to open in Liverpool with a 120-cover restaurant on Castle Street this winter.
The restaurant – which doesn’t take bookings – proved such a success, that founders Jim Morgan and Kate Wilson were soon approached by Mission Mars, the team behind another Manchester success story, Albert's Schloss, for a slice (sorry) of the action, opening a larger site on Peter Street earlier this year.
Just as you’d find in Naples, Rudy's make their dough on site every day, giving it 24 hours to double ferment and just 60 seconds to cook.
Specialities include ancozzese affumicata, a ‘white pizza’ with chilli flakes, smoked mozzarella, Tuscan sausage, friarielli (wild broccoli) and olive oil, or calabrese with spicy soft Calabrain sausage that melts into the pizza.
The ethos of Rudy’s is as a true independent artisan operator. The restaurants offer a relaxed environment in a stripped back industrial style with passionate Pizzaiolo’s intent on following the traditions and artistry of pizza from Naples – the birthplace of pizza.
Rudy’s has not announced an exact date for their Liverpool opening, but has promised it’ll be ‘this winter’.
