To celebrate their Liverpool launch they've created a halloumi special with Hafla Hafla
AS a taster for its Bold Street opening, Honest Burgers told us about their special Liverpool creation dreamt up with Middle Eastern experts Hafla Hafla of Baltic Market and Lark Lane.
The Liverpool Special will be one of nine burgers available on the menu at the new restaurant opposite Mowgli Street Food and Nolita Cantina
The Liverpool Special sees Honest's standard patty - made from scratch in their own butchery with chopped (not minced) British chuck steak and rib cap – combined with British halloumi from award-winning Kupros Dairy, spring onion, lettuce, Sriracha sauce mayo, and salt and pepper.
Tom Barton, co-founder of Honest Burgers alongside Philip Eeles, says: “We met Hafla Hafla when we parked our Field Kitchen next to them at the Liverpool Craft Beer Expo. When we tried Liam and Tim’s halloumi fries we knew we wanted to get it in our local burger.”
Hafla Hafla founder Tim Haggis says: “We tried Honest Burgers for the first time at Craft Beer Expo. I couldn’t believe how good the burgers were. I’m super excited for our collaboration.”
The Liverpool Special will be one of nine burgers available on the menu at the new restaurant opposite Mowgli Street Food and Nolita Cantina, alongside the Honest (beef served medium-pink with smoked bacon, cheddar, red onion relish and homemade pickles), US-inspired Tribute and vegan Plant burgers, alongside their equally famous homemade rosemary-salted chips (described by food critic Jay Rayner as ‘edible crystal meth’) plus chipotle mayo and bacon gravy.
To help wet the baby’s head, Honest’s exclusive beer collaboration with Baltic Triangle-based indie brewery Black Lodge Brewing will be available from day one. Tried and tested at their recent joint party (more here), Bold St Pale is a 4.7% summery American-style hopped session ale with tropical grapefruit flavours. Says Black Lodge operations director Robbi Etherington: “We are super keen for everyone to try the first iteration of Bold Street Pale, our collaboration brew with the mates.”
If gin’s more your thing, there’s the Honest G&T made with small batch Honest Gin (using botanicals found in Honest’s kitchens, including cucumber and dill), or the Bold Street exclusive Liverpool Pink G&T, made with Wavertree’s Three Graces Rose Gin (more here), Fever Tree Aromatic Tonic, rose petals and lemon.
