Craig Rogan has developed an elevated menu celebrating the Yorkshire pud

Whoever said the customer is king was undeniably right, as one of Leeds’ luxury hotels proves by launching a menu consisting of the nation’s favourite Sunday side; the humble Yorkie – now elevated to crisp new heights. 

At Dakota Deluxe Hotel in the heart of the city, Executive Head Chef Craig Rogan, son of culinary heavyweight Simon Rogan, has devised a menu to rival the proudest of Yorkshire pubs. 

We’ve seen other chefs make Yorkshire pudding wraps, or fill a Yorkshire with an entire roast dinner, but this is the first time ever that a restaurant has created an entire Yorkshire pudding menu

Following requests from regulars, the hotel decided to put their eggs in one very large pudding tray, and whip up a quartet of toppings for their dedicated menu, which is available from Sunday 15 May. 

“Taking a dish with such history and culture behind it and adapting and modernising it for our guests was a brilliant experience,” Rogan notes. 

“We are so excited to share this menu, which puts a modern twist on an iconic English side dish, all while celebrating God’s own county - Yorkshire.”

Saving it from the threat of mere gimmickiness, the proof in the pudding comes in the form of seasonal ingredients of the highest quality. 

Combinations include wild mushroom, pearl onion and smoked pancetta, Easingwold pork stuffing, black pudding and apple, plus ox cheek and bone marrow mash. Each fluffy Yorkie is served with lashings of Chef Rogan’s rich signature gravy, which is rumoured to be better than your Nan’s.
