Take a closer look at chef Lee Evans' ambitious new dishes

THE moment you step through Dash’s grand stone doorway, you know you're in for something special. The staff who greet you are friendly and knowledgeable, and the interior design works with the stunning Victorian building to produce a timeless elegance. The experience is so polished it might come as a surprise that Dash was set up by four Liverpool lads less than a year ago.

This December, Dash will celebrate its first anniversary with the launch of a stunning new menu. Featuring seasonal, playful and showstopping dishes from executive chef Lee Evans, it looks set to secure Dash’s position as one of Liverpool’s most exciting place to eat. 

Evans' dishes burst with the flavours, smells and sights of East and West. Spanish bar snack padron peppers are given a new dimension with the Asian citrus tang of yuzu. And Cantonese lamb skewers are enlivened with the Mediterranean sweet and sour of pomegranate molasses. 

Slow-cooked short rib is served under a smoke-filled cloche, giving the juicy beef a subtle barbecue flavour. The tartness of pear and fresh kimchi with jasmine rice is a superb accompaniment to this theatrical dish.

A sharing dish of chateaubriand steak with red wine jus and truffled bone marrow sounds typically French. But at Dash, it's a world away from what you might expect. Their chateaubriand is served on banana leaves on a red bamboo tea tray, with a wisp of smoke that carries the aromas of tea and rosemary.

Sushi and bao buns, established Dash favourites, balance authenticity with innovation. Western delicacy truffle is paired with the classic Japanese flavours of teriyaki beef, tempura enoki mushrooms and wasabi peas. 

Vegetables get as much love from the chef as meat and fish. Try Evans' avocado rainbow roll with its rich, umami flavours of smoked tofu, hijiki seaweed, and soy and sesame mayonnaise, contrasted with refreshing watermelon.

Make sure to leave room for something sweet. The Pornstar Martini cheesecake turns one of the great drinks into one of the great desserts. While the sticky toffee pudding takes the best of classic English comfort food and transforms it into a new, exotic dish. It's spiced with Asian stem ginger and served with coconut ice cream and hot caramel sauce, poured in front of you.
