2021 winner Dan McGeorge to open Vetch in Spring
Great British Menu winner Dan McGeorge has chosen his home city to open his first restaurant.
The 2021 winner will open his fine dining restaurant, Vetch, on 29A Hope Street later this Spring.
The 26-cover restaurant will be based over two floors of a Georgian listed building which promises "subtly understated decor, delivering two intimate spaces with block-coloured walls in heritage colours, offsetting simple understated furniture and low lighting."
Georgia and I wanted to move back to Liverpool and realise our joint ambition to open a restaurant
But what about the food?
Vetch, taking its name from a wild member of the pea family, will boast a similarly nature-focused food offering using the best seasonally available produce in order to create its Nordic and Asian-influenced tasting menus.
The five-course lunch tasting menu will be served three days a week, Thursday to Saturday, at 1pm and will be priced at £85 per person with matched drinks pairings also available.
Meanwhile the seven-course dinner tasting menu will be served four days a week, Wednesday to Saturday, from 6pm and will be priced at £105 per person with matched drinks pairings also available.
After stints in several high-profile kitchens working under some of the best in the industry, including one-starred Bath Priory and Ben Mounsey's Lawns Restaurant, Dan moved to the Lakes in September 2017 to be head chef at the then two AA rosetted Rothay Manor.
Following further acclaim, including a third AA rosette, an Acorn Award and (of course) being crowned 'Champion of Champions' in the 2021 edition of Great British Menu, Dan left Rothay Manor in October 2023 to take time out with his young family before searching out the perfect venue for his debut restaurant.
"It was a big decision leaving Rothay," said chef-owner Dan. "But it was the right one to make. Georgia and I wanted to move back to Liverpool and realise our joint ambition to open a restaurant. We’ve been fortunate enough to find an amazing location right in the middle of the city at 29A Hope Street.
"We’re busy recruiting staff at the moment and then we’ll spend time working with our team to hit the ground running. Hopefully opening the doors in early May. We can’t wait to welcome guests through the door to enjoy what will hopefully be a great additional to Liverpool’s emerging dining scene."
