The Argentinian steak restaurant will open on Water Street in November
Back in July, we brought you the meaty news that Gaucho was looking to open at 7 Water Street in the former Bank of Liverpool building. Now, it's official, and Gaucho has confirmed a few more details about its latest UK restaurant, including some pretty swish-looking CGI images of the interior.
The restaurant says it will be the first in the city to exclusively serve carbon-neutral beef.
Creating 100 new jobs for the city, the restaurant will showcase Gaucho’s recent evolution in menus and design, inspired by modern Argentina and all its global influences.
Extensive works are being undertaken to bring this historic building back to life. The building has had a seven-figure investment and the 200-cover venue aims to capture the elegance and passion for the cultural and culinary heritage of modern Argentina.
An iconic feature of the Grade ll-listed building is the two large bronze tiger’s heads on the main doors of the building. Legend has it that lascar sailors, of which there were many in Liverpool in the late 1800s, used to come and rub the tiger’s teeth for good luck - hence why they look a bit more worn and shiny than the rest of the head. Other features include grand high ceilings, original timber panelling and a marble fireplace with a carved Liver Bird.
The restaurant says it will be the first in the city to exclusively serve carbon-neutral beef, embodying CEO Martin Williams’ vision for the way that restaurants should operate responsibly both socially and environmentally. Gaucho Liverpool represents a key moment for the "Sustainable Steak Movement", which Williams launched in autumn 2021 to accelerate the transition towards more environmentally friendly beef production.
In addition to the restaurant, the venue has a 90-cover bar area, two private dining rooms and a “Beef Bar”’ where guests can enjoy experiences such as a beef and wine masterclass.
The à la carte menu, overseen by culinary director Mike Reid, features contemporary Latin-American starters such as shrimp ceviche and empanadas. These are followed by a selection of carbon-neutral steaks from Black Angus cattle, bred in Argentina from the Pampas provinces. Alongside the steaks, main courses include the likes of vegan pasta alla norma and whole grilled sea bass with herbs and lemon, whilst desserts feature Gaucho’s signature salted dulce de leche cheesecake.

The first Gaucho opened in 1994 in Piccadilly. The collection of restaurants in the UK has grown to twelve in London and five regional sites in Leeds, Manchester, Birmingham, Edinburgh and Glasgow.
Gaucho’s sustainable drinks programme promotes biodynamic, organic and natural wines; all restaurants operate a zero food to landfill policy and all sites run on 100% renewable energy. By 2030, all Gaucho restaurants aim to be net zero carbon emissions.
Bookings for Gaucho Liverpool are now live and the restaurant will officially open 28 November 2022.
