Two-time Great British Menu contestant Dave Critchley reimagines the classics
Popular Hope Street spot Frederiks is set to launch its new spring menu in collaboration with two-time Great British Menu contestant Dave Critchley.
The proud Liverpudlian and renowned executive chef, once of Lu Ban and the AA-rosetted London Carriage Works, applied his expertise to Frederiks menu with a simple goal in mind.
“The brief from the Fred’s team was simple: ‘We want guests to feel like they’ve been fed,’” said Dave. “I started by reimagining some of Frederiks’ much-loved dishes and introduced a selection of new options, all crafted for incredible flavour—without counting calories.”

The menu, set to launch on Tuesday 15 April, takes inspiration from a fusion of Italian and American cuisines including informal sharing plates and a focus on comfort eating.
It will include the likes of mac and cheese with black truffle, salt cod with lemon butter and watermelon salads in time for spring sunshine.

There will also be nostalgic nods to Frederiks’ original 2014 menu, with Dave switching up the sliders for 2025 with the likes of smash burgers, buttermilk chicken and roasted jackfruit with pomegranate slaw.
The cocktail menu will also see some additions for customers to try with their two for £15 deal (excluding after 6pm on Fridays and Saturdays), including Midnight on Hope Street, a blend of Bourbon, shiraz and almond syrup.

Alongside the revamped food and drink offering the venue will also be staging Hope Street Jazz from Tuesday to Thursday and Secret Improvisers Club on Friday.
