Ex-Feed Chef Jono Hawthorne has come up with a new concept and some exciting new dishes
Since 2016, Vice & Virtue has picked up rave reviews and awards such as Yorkshire Evening Post's Best Chef and Best Fine Dining Restaurant, thanks to their adventurous tasting menu and passion for paired drinks.
Now they are changing things up once more, with a new head chef and a new concept.
After seeing what Jono did with Feed, I knew he was the chef I needed to step things up at Vice
Chef Jono Hawthorne already has substantial experience having worked at Noma, Sydney’s Quay and Man Behind the Curtain. He has also been head chef at Pudsey’s Feed since it opened. Now, he is taking on the reigns at Vice & Virtue and has been working on a new menu that celebrates Vice’s success as well as taking it on a new culinary journey. The first-floor bar will also be getting a food menu to complement their exceptional cocktails.
Part of this will be a new a la carte menu to stand alongside their existing tasting menu. The standalone dishes include 10-Day salt-aged mackerel, BBQ langoustine glazed in Ppg fat, 1-hour cooked jowl with apple, eel and foraged herbs. The tasting menu will be getting a few special new additions too, including Grade five Wagyu beef cooked on a Konro grill, with violet mustard, fermented cabbage and wakame.
Because of a four-day working week for staff across the Vice group, Hawthorne and Co will have plenty of time to experiment and delight in equal measure.
“I believe we have the strongest team we’ve ever had before and can continue our success story,” said founder Luke Downing. “After seeing what Jono did with Feed, I knew he was the chef I needed to step things up at Vice. Together, we’ve created a range of dishes that make the best of locally sourced and foraged produce, with something for both the staunch foodie or more old school, casual diner to enjoy. I can’t wait to get these new menus out there and see what the people of Yorkshire think of them.’’
We’re looking forward to going back in to see if the new menu can beat the impressive score of 16/20 in a review from Neil Sowerby a year ago.
