CRAYFISH Boils are the thing in Texas and America’s deep south. Now they are set to be the thing in redneck south Liverpool when Slims Pork Chop Express go outdoors to bring the shellfish spectacle to Sefton Park in Liverpool Food, Drink and Lifestyle Festival.

Running over the weekend of April 23rd and 24th, the hispster city centre venue will be setting up camp in The Wood Lands, one of five specially designed areas of the festival site located under a canopy of mature oaks and sycamore.

A field kitchen will see chefs prepare huge pans of spicy broth, bringing them to the boil before Crayfish are dropped in and cooked throughout the day, with the sauce improving in flavour with every boil, it says here.


The Slims Pork Chop Express team will be running ticketed sessions throughout the day on both festival days, with visitors seated at long tables awaiting bowls of steaming hot crustaceans which will be "dumped down, along with mountains of boiled potatoes". 

They will even teach you how to eat them.

If Crayfish isn’t your thing Slims will be bringing their hickory smoker along and serving up meats and ribs matched with beers, Prosecco and classic cocktails, while El Bandito will be running tequila and mescal "masterclasses" for heavy drinkers.

Matt Farrell, of Slims, said: "The wood lands is a really cool area of the festival site and the perfect location for our outdoor dining experience. The chefs have been refining their recipes so we’re looking forward to hearing what visitors think between mouthfuls.”

The Liverpool Food, Drink and Lifestyle Spring Festival takes place in Sefton Park on April 23rd and 24th.
