Head to Sale waterfront and you’ll find a taste of Italy – a taste of Rome, in fact. The pizzas we serve at MANO a BOCCA are Romana style: a thin-crust base with a minimal crust. It’s why we’re called “hand to mouth” – that’s how we reckon you should eat them.
Ingredients are our top priority (after our customers, of course!) and we make our dough daily using specially imported Italian flour and extra virgin olive oil to give a unique flavour. It’s then left to prove for 24 hours to give our pizzas their signature light fluffiness. We import our ingredients directly from Italy for a truly authentic finish: including scamorza (smoked cheese) and fior di latte (mozzarella), salsiccia (Tuscan sausage), bresaola (cured beef) and red Calabrian piccante chillies.
We put our bespoke menu together with the help of artisan pizza expert Marco Fuso to bring you our take on classics like Margherita, Pepperoni and Fiorentina, alongside our very own brand-new creations. Common in Rome are bianca bases, without tomatoes, and we offer a choice, from the Speck (cured smoked ham) and Gorgonzola to the Gamberoni (tiger prawns, crème fraiche, and spinach), and from the Zucchini (courgette flower and anchovy) to the vegan Cavolfiore (curried cauliflower). Another of our plant-based picks is the broccoli, with vegan mozzarella and, unusually, a butternut squash base rather than tomato.
