A new restaurant is about to open in East Didsbury that we're watching with eager eyes. CIBO is a Venetian-influenced eaterie and bar serving cicchetti (the Italian equivalent of tapas).

The head chef there is Martin Cordwell, who was at the helm at Stock for five years before this. He's, by all accounts, a little bit obsessed with the quality and freshness of his ingredients. They're getting deliveries seven days a week at CIBO to ensure everything is at its best. And they're making everything from scratch – the pasta, the dough, the desserts.
When a restaurant starts like this, with a determination to do things right rather than cut corners on cost and time, it's a very good sign. Gordo has been there already for a tasting preview and was impressed.

As we write this, the menu is still being tweaked, but dishes will include Slow braised ox cheek with black peppercorns, Monkfish with tomato and black olives, Halibut with prosecco and asparagus, and Ravioli neri with crab.
There's also an entire menu section devoted to meatballs.
CIBO is a bar as well as a restaurant. Order a glass of Italian wine with a few cicchetti dishes on the side, or go for one of their cocktails. They're described as 'twisted classics' and include smoked infusions, candy floss floats and other delights.
